<p>唔同食物的配合當然有不同。雲吞皮係配合雲吞麵去食,食時在麵內加入醋等去減低鹼水味。</p>
<p>燒賣皮買唔到可以試下用上海水餃皮會好少少 ! </p>
<p>或者自製 :<br />
自製燒賣皮 : 約 20片 (只供參考)<br />
高筋粉 150g  /  雞蛋  1隻  / 鹽 1/8 茶匙<br />
 // 黃色色素 少許 (可以唔加)</p>
<p>做法 :<br />
1.將所有材料混合搓成光滑粉糰, 然後用保鮮紙蓋好<br />
放室溫醒發30分鐘.<br />
2.將麵糰分成多份, 每份約15g, 灑上少許生粉或高筋粉,用木棍輾薄成圓形粉皮</p>
<p>注: 每種高筋粉水份吸收有別, 蛋液最好分次加入去調較, 如粉糰太乾, 可以加入少許水份.</p>
